The Holiday Blue and White Cookie Bars are easy for a new baker. First, prepare a baking dish with parchment paper. Next, combine the wet ingredients, the melted butter, sugars, salt, espresso powder and vanilla. Stir in the eggs. Whisk the flour, corn starch, baking soda and cinnamon together in a medium bowl. Add the dry ingredients to the wet, stir and combine. Do not overmix.

Here comes the fun stuff. Time to fold in the blue and white swirled chips, white chocolate chips and pecans if you are using. Spread the dough into the baking dish and flatten with the back of a measuring cup so the bars bake evenly.

ingredients:

Cookie Bars
  • 1 ½ sticks of unsalted butter, melted
  • ¾ cup of brown sugar
  • ¼ cup of granulated sugar
  • ¼ teaspoon of salt
  • 1 teaspoon of espresso powder
  • 1 tablespoon of vanilla extract
  • 2 eggs, room temperature
  • 2 ¼ cups of all-purpose flour
  • 1 ½ teaspoons of corn starch
  • 1 teaspoon of baking soda
  • ½ teaspoon of each cinnamon
  • 1 cup of blue and white swirled vanilla chips (or candy-coated pieces)
  • 1 cup of white chocolate chips
  • 3/4 cup of chopped pecans, optional
Cookie Bar Topper (Optional)
  • 1 oz. of melted chocolate
  • 24 pieces of holiday gelt or chocolate coins

How to cook Holiday Blue and White Cookie Bars

  1. Prepare a 9x13” baking dish with parchment paper. Preheat the oven to 325F.
  2. In a large glass bowl, combine the melted butter, sugars, salt, espresso powder and vanilla. Stir in the eggs.
  3. In a medium bowl, whisk the flour, corn starch, baking soda and cinnamon together.
  4. Add the dry ingredients to the wet, stir and combine. Do not overmix.
  5. Next, fold in the blue and white swirled chips, white chocolate chips and pecans if using.
  6. Spread dough into the baking dish and flatten with the back of a measuring cup.
  7. Bake the cookie bars for 25-28 minutes, rotating halfway through the bake time. Do not overbake. Cool in the dish for 20 minutes, lift via the parchment paper, then transfer to a rack.
  8. Once cool, cut into bars with a sharp knife. Dot each cookie bar with ¼ teaspoon of melted chocolate, and gently press holiday gelt into the center. Transfer the bars to a rack and allow the cookie bar topper to set up.
  9. Store in an airtight container for up to a week at room temperature.

NOTES:

• You can omit the holiday gelt and add a Hershey’s kiss or other chocolate piece. • Have fun with these bars! Change up the baking chip colors and cookie bar toppers for other holidays.
