Thanksgiving Leftovers

What's the best part of Thanksgiving? The leftovers, let's face it. All of the pressure is off and you have a mashup of goodness.

It's time to turn off the stove, bid goodbye to your family from out of town and settle into those stacks of Tupperware and mystery blobs of tin foil!

Here are two favorites, the Any Pie Milkshake and Any Pie Overnight Oatmeal.

The Any Pie Milkshake is so easy to make. You can use any pie, too! If you want to try a creamy chocolate or mint pie, that would be incredible! The Any Pie Overnight Oatmeal is a rich treat for breakfast or a great snack to take on the go. These recipes are easy for beginners.


Any Pie Milkshake

Ingredients

  • 1 medium slice of apple, pumpkin or pecan pie

  • 2 cups of vanilla bean frozen yogurt or ice cream

  • 1/2 cup of milk

  • 1/2 teaspoon of cinnamon or pumpkin pie spice

  • 1/2 teaspoon of vanilla extract

  • 2 tablespoons of pie crust, crumbled

Instructions

  1. Blend all ingredients together.

  2. Garnish each shake with crumbled pie crust.

    Makes 2 shakes. For chocolate or banana cream pie, omit the warm spices. Cobbler works, too!


Any Pie Overnight Oatmeal
Ingredients

  • 2 cups of vanilla bean frozen yogurt or ice cream

  • 2 large slices of sweet potato pie, pumpkin pie or apple pie

  • 1 cup of uncooked old fashioned oatmeal

  • 1 cup of milk

  • 2 tablespoons of honey

  • 1/4 cup of vanilla or plain yogurt

  • 1/4 teaspoon of pumpkin pie spice

  • 1/4 teaspoon of vanilla extract

  • 2 tablespoons of pecans, chopped


Instructions

  1. Scoop filling from pie slices. Crumble the crust and set aside in an airtight container.

  2. In a medium bowl, add the filling, oatmeal, milk, honey, yogurt, spice, and extract. Stir, cover and refrigerate for 8 hours.

  3. Mix together crumbled crust and chopped pecans. Stir half the mixture into chilled oatmeal. Divide into small cups or jars. Top with remaining mixture.

    Makes 2 portions.

    Try this recipe with cherry pie, too! If you have leftover cranberry sauce, follow the recipe omitting the pie and instead of the crust, use about 3 crushed ginger snaps cookies. YUM!
