Our delicate Mini Latke Bites hit all the right holiday notes! These one bite wonders are flavorful and pleasing. Serve them for Hanukkah or throughout the year during cocktail hour.

Preparation and assembly are simple!

Prepare a baking sheet with parchment paper. This serve as your work surface. Carefully set out the mini pastry shells on top of the prepared sheet. Cut the latkes to fit inside the pastry shells (you may need to shape them with your hands to fit). At this point, you can place the filled shells in the oven on warm and finish with the remaining steps just before serving.

Next, place a small amount of sour cream on top of the latke, followed by the applesauce. Top each Mini Latke Bite with a dried craisin. Serve immediately and watch them disappear!

You can try other vegetable latkes in this recipe! Top with sour cream and chives, and a small piece of red pepper or carrot. Hash browns can be a great substitute for latkes if your supermarket does not offer a kosher section.

The Mini Latke Bite recipe can be easily doubled or even tripled for a crowd.

ingredients:

  • 1 package of mini phyllo dough pastry shells (fully baked; 15 per box)
  • 4 small or 2 large fully baked traditional white potato or sweet potato latkes
  • ¼ cup sour cream
  • ¼ cup applesauce
  • ¼ cup of dried craisins infused with pomegranate juice, other miniature dried fruit or a fresh pomegranate aril

How to cook Mini Latke Bites

  1. Prepare a baking sheet with parchment paper.
  2. Carefully set out the mini pastry shells on top of the prepared baking sheet.
  3. With a knife, cut the latkes to fit inside the pastry shells (you may need to shape them with your hands to fit). At this point, you can place the filled shells in the oven on warm and finish with the remaining steps just before serving.
  4. Gently place 1/8 teaspoon of sour cream on top of the latke. Then, dollop 1/8 teaspoon of applesauce.
  5. Top each Mini Latke Bite with a dried craisin.
  6. Serve immediately.

NOTES:
