Elvis’ favorite crave-able sandwich, made with love by his mom Gladys, was bursting with bananas and peanut butter and of course, loads of butter! This recipe was inspired by The King of Rock and Roll himself.

You can’t help falling in love with The King’s Peanut Butter Banana Bread! The bananas, peanut butter, honey and brown sugar are like music to my ears. This version of Elvis’ sandwich is easy to make using standard pantry ingredients.

The ripened bananas (the kind that are very freckled) are very sweet, so we didn’t use a lot of sugar in this recipe. If you prefer a sweeter bread, adjust the recipe with a bit more granulated sugar. You can also try adding 2 pieces of chopped and cooled bacon to the mixture just before you spread the batter into the prepared pan.

The King’s Peanut Butter Banana Bread starts by mashing super ripe bananas together. Next add the peanut butter and honey until well combined. Mix in the extract, milk, eggs, and sugars, then stir in butter. Gently stir the wet ingredients into the dry until moistened and add the peanut butter baking chips. Be sure not to over mix.

Spread the batter into a prepared pan and top with the chopped peanuts. Bake, and release from the loaf after 10 minutes of resting in the pan and set on a cooling rack. You’ll want a little less conversation a little more eating after you take that first bite!

This recipe is easy for a beginner baker and does not require any special tools.

ingredients:

  • 3-4 super ripe large bananas, mashed
  • ½ cup of peanut butter
  • 1 tablespoon of honey
  • 1 tablespoon of vanilla extract
  • 3/4 cup milk (whole preferred), at room temperature
  • 2 eggs, at room temperature
  • ¼ cup granulated sugar
  • ½ cup of brown sugar
  • 6 tablespoons of melted butter, cooled slightly
  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • ½ tsp. salt
  • ¾ cup of peanut butter baking chips
  • ¼ cup of chopped peanuts

How to cook The King's Peanut Butter Banana Bread

  1. Preheat oven to 350°F. Prepare a 9x5 loaf pan with parchment paper and cooking spray.
  2. In a medium bowl, stir together mashed bananas, peanut butter and honey until well combined. Add extract, milk, eggs, and sugars. Stir in butter. In a large bowl, whisk together dry ingredients.
  3. Gently stir the wet ingredients into the dry until moistened (do not over mix). Add in the baking chips.
  4. Spread in prepared pan top with the peanuts. Bake for approximately 35-40 minutes or until golden, rotating the pan in the oven halfway through the baking time. Remove from the oven. Release from the loaf after 10 minutes of resting in the pan and set on a cooling rack until room temperature.

NOTES:

• Not a lot of sugar is used in this recipe, since the ripened bananas are very sweet. If you prefer a sweeter bread, adjust the recipe for ¾ cups of granulated sugar. • Try adding 2 pieces of chopped and cooled bacon (or vegan bacon) to the mixture just before you spread the batter into the prepared pan! Reduce salt to ¼ tsp. • Store in a gently sealed plastic container. • For freezing, wrap in parchment, followed by tin foil. Encase in a large freezer proof bag. • To make a true Elvis Sandwich you’ll need: o 2 slices of sweet Hawaiian bread o 1 super ripe large banana, mashed o 1 tablespoon of peanut butter o 2 slices of bacon, optional o 1 tablespoon of butter Directions: On one slice of bread, place the mashed bananas, then on the other, spread the peanut butter. Place one strip of bacon on top of both slices, sandwich together and cook in a frying pan until browned on both sides. The bacon is optional because it’s just a rumor if that was his preference!
